Panini press...2 eggs...found a dishwasher full of clean dishes and at the end...travis found Himalayan sea salt. This is now fine dining, sitting on cardboard with wine in a paper cup.

Cauliflower Breadsticks

Cauliflower is the rage now and everyone, big and small, in my family loves it too!  Our favorite go-to lately has been roasted cauliflower, and thanks to Pinterest, there are 1,000,001 ways to make it.  But, I've seen a few variations on pizza crusts and breadsticks too.  Check this out! Ingredients
1 head cauliflower, large (7" - 8" wide)
1/4 cup egg whites
1/2 cup + 3/4 cup (for topping) Mozzarella/Tex Mex cheese, shredded
1 tsp Italian herb seasoning or any dried herbs like rosemary, basil, parsley
1/4 tsp freshly ground black pepper
Pinch of salt
Marinara sauce for dipping

Eat Sweat Pray

How fun is this??? Eat Sweat Pray!!! Just like  my blog that you're reading right now :) My sweet friend, Jeannie, had this made for me and surprised me with it this weekend in New Orleans!! That girl has a big heart. β€οΈβ€οΈβ€οΈ 

I felt bad sweating in it today, but you know how the best weeks start...SWEATY!! So in the wash it goes. 

This is my JAM!

The new salad at Panera is my JAM. When you get back from vacation and your fridge is BARE, you eat out. I can't wait to do a costco run and some meal prep. These are words I never would be caught dead saying two years ago. haha. What healthy fast food salads have you found? Chick-Fil-A has some good options too!

SUN DRIED TOMATO BACON GUACAMOLE

I find when I have weight loss goals, I'm sometimes hesitant about going to parties and getting totally sidetracked on my progress.  I might have fun and then I get in this "party depression" afterwards.  Please, please, don't get into that rut!  Try making something that you can take to the party and stay on board with your goals.  Then if there's nothing else healthy to eat, you have fruit, veggies, guacamole, cheese, etc to snack on.  Try dipping cucumbers or celery in this guac instead of chips to cut back on carbs and calories.  There are always modifications you can make so you can be social, have fun and still stay on track. 

SUN DRIED TOMATO BACON GUACAMOLE

INGREDIENTS
4 ripe avocados, mashed
4 pieces of crunchy bacon, chopped
Β½-1 lime juiced (to taste)
1 clove garlic, minced finely
Β½ onion, finely chopped
ΒΌ cup minced sun dried tomatoes
Β½-1/14 cup minced jalapeΓ±o
ΒΌ cup cilantro, chopped
salt and pepper to taste

Kid's versions of Shakeology!

We now have a kid's versions of Shakeology! There are two flavors: 1) vegan chocolate and 2) vegan strawberry-banana. Each shake is made with organic fruits and vegetables, organic pea protein, healthy fats, has 3 grams of fiber, probiotics from Bacillus coagulans, vitamins C & E, calcium, and vitamin D.

I'm so excited to have my boys try this. They both love Sgakeology already, but now I don't have to share πŸ˜‚πŸ˜‚πŸ™ŒπŸ»πŸ™ŒπŸ»

Workout in the streets!!

Where ever you are, be all there!! Right? Yes... to an extent πŸ˜‚πŸ˜¬πŸ˜΅ this "workout in the streets" with the Super Trainers looked like it was a blast, but at 6am...WE SLEEP!! πŸ˜΄πŸ€—πŸ€—πŸ€— and at 7:30am a few Team Energize coaches built our own community at J. W. Marriott's fitness center.

Beachbody on Demand and 22 min Hard Corps for the win because 22 was about all the time we had today! 

I know 7:30am sounds crazy, but we have team lunch, team dinner, leadership workshops, and recognition parties to get to, so we need to get it done early before the excuses started rolling in! I can't wait to serve YOU and share everything that I'm learning!! 

If you think you can't have community + workout + have a job, then we need to talk!  There are so many possibilities in front of you and building community is my #1 goal!

On stage

Ekkkkkkk. Last year I was in the row furthest from the stage and this year I'm right up front. Yes, I'm drinking the Kool-aid (or shakeology I should say), but so exciting to be hanging with Top 10 Coaches and arrive at a table with your name on it!!  

Our CEO is playing the drums along with the rest of the "corporate band" πŸ˜‚πŸ˜‚I love that they know how to get work done, yet let loose and throw a good party!  

Shift Shop & 21 day fix groups are both live. Work is not stopping because I'm on vacation!  I'm sleep deprived and a crazy lady right now so if I missed adding you PLEASE email me!! No one left behind on this results bus 🚌.

Ingredients:

  • 3 TBSP fresh blueberries, plus additional for garnish
  • 2 fresh strawberries, diced, plus additional for garnish
  • 10-15 fresh mint leaves (a small handful), plus additional for garnish
  • 1/2 medium lime, juiced (about 1 tablespoon fresh lime juice)
  • 1 tsp stevia
  • 1 1/2 oz white rum

I maxed out!!

This sweaty selfie is no reflection of how dang hard his workout was, and I MAXED out today. That doesn't happen often.  In Beachbody world that means 1) I about died and 2) I had to take a break.  And to add fuel to the fire, we had to be here by 6am.  Never mind the 30 min walk it too to get here.  I would have laid on the floor had I not felt like I'd get trampled on!

My "forward fold" during cooldown turned into a prayer of thanksgiving for living through these 45 min πŸ˜‚πŸ˜‚πŸ™ŒπŸ»  Have you ever maxed out before?  Look at all the community in this room!  There are THOUSANDS of like-minded people here lifting each other up, encouraging each other rather than competing, I never thought a job could be so rewarding in so many ways!  Lets talk!

21-day pumpkin muffins you've been waiting for!!!

I have gotten so many requests for these that I wanted to share it with everyone!!  Here you go!  My favorite way to eat these is with ΒΎ cup plain greek yogurt, or 2 eggs.  It's a great breakfast or snack choice. 

Pumpkin Muffins
1 1⁄2 cups whole wheat flour or spelt flour for milder flavor
1 TB pumpkin pie spice*
1 tsp baking soda
1⁄4 tsp baking powder
1⁄2 tsp salt
2 eggs
1⁄2 cup honey
1/3 cup melted butter 1 cup pumpkin puree

Directions: Preheat oven to 350. Line a muffin pan with liners or use nonstick spray. Using a whisk or fork, mix together the flour, pumpkin pie spice, baking soda, baking powder, and salt. Make a well in the center of the flour mixture and drop in the eggs, honey and melted butter. Mix together until well combined. Fold in the pumpkin puree. DO NOT over mix. Pour batter evenly into muffin pan. Bake until golden brown and a toothpick comes out clean, about 18-20 minutes or 10-12 minutes for mini muffins. Store at room temperature or freeze. Serving size 1 muffin.
21 day fix container: 1 yellow

***Don’t have pumpkin pie spice? Make your own! Here is that recipe!***
1 1⁄2 TB cinnamon
1 tsp ground ginger
1 tsp ground cloves
1 tsp allspice
1 tsp nutmeg

Directions: Place all in small, sealable container and mix together. Store in cool dry place up to 6 months. Yields almost 3 TB. 

New Orleans masquerade!

What a fun ELITE party!! I know I've been with Beachbody 1.5 years, but getting spoiled never gets old and I don't take it for granted one bit. 

It was super fun last night hanging out with friends and Super Trainers from our programs. It sounds silly I know, but I can't believe this is part of my job!! Feeling affirmed and getting paid to workout, drink shakeology, coach others, and recognize people is something I look forward to EVERY day and really feels like my calling.

Chocolate Hazelnut Acai Bowl

Acari bowls are both fun to create and enjoy!  Try getting your kids involved!  And try other flavors besides just Acai berries.  Here's one of my favorites!

Ingredients:
ΒΎ cup unsweetened almond milk
1 scoop vegan or regular Chocolate Shakeology
2 TBSP chopped raw hazelnuts (no nutella y'all, that's NOT clean)
1 cup ice
1 1/2 tsp unsweetened shredded coconut
1 1/2 tsp sesame seeds
1 TBSP chopped dark chocolate

Directions:
Blend all liquid, ice, Shakeology and hazelnuts together until completely smooth.  Then top with sesame seeds, coconut and dark chocolate.  Enjoy!  Makes 1 serving.

I cannot wait to spend 5 days with my coaches in New Orleans!!! We are going to have a blast and be totally spoiled by Team Beachbody. I hope all my coaches soak it up because they've worked so hard all year!I had fun shopping for these goodie bags in Australia! 

I'm bringing lots of water because we will need to rehydrate! Wine is a yellow, right?  (21 day fix humor) πŸ˜‰ πŸŽ‰πŸΎπŸ· πŸ™ŒπŸ» I can't wait to celebrate so many team diamonds and star diamonds!! Y'all are helping so many people!

Sushi is in order

You know me and my LOVE for sushi. So, as soon as I arrived and got a few hours of sleep, off to sushi I went :)  If you're doing Shift Shop and trying to stay low carb / paleo then ask which rolls they can make with no rice.  There are usual options even if not listed on the menu. I always ask for no sauce or request it on the side because that's where all the calories are and that's not how they serve sushi in Japan.  Let the fish speak for itself, esp if you're getting it raw!  that's what you're paying for and it's not cheap!  

Favorites:
San Diego - Kaito Sushi in Encinitas.  Hands down the best and you'll see all the boxes out front from it being flown in that day.  Not much signage, and not great ambiance inside, but you might sit next to Tony Hawk or some other celebrity that just wants amazing sushi and know's where to go. This is a word-of-mouth place. 

Houston - Nori in Town & Country. I love their fish, it's more of a corporate feel inside, booths, etc.  But they have great fish!  I am not a fan of their wine / sake list, but they have lots of beer options.  

Izakayawa Sushi in Memorial.  We love this place and take all our out of town friends here. It's very social, great ambiance and a wonderful Sake menu!  I love cold sake :)  Try the Wa fu Futomaki roll.  Just do it :)  

All the veggies!

You guys this might not look good, but all I want right now are veggies!!! (And it tasted better than it looked...I'm slightly obsessed with 21-day fix homemade balsamic vinaigrette!!) They are so expensive in Australia that I chose fruit over it, but I'm back and taking them all in πŸ˜‚πŸ˜‚

You know what's plentiful and cheap there... ice cream 😬
