You would never believe it, but this is the easiest way to cook salmon and because it looks so cool, my kids were super excited to help! Even my 4 yr old came running to see what I was doing :) Let them help! Besides the chopping, they made this whole meal! (confession - I bought the zucchini noodles because our spiralizer is somewhere between the US and Australia on a ship....so it is what it is. ha)
Take aluminum foil and make it big enough for 1 piece of fish diagonally. Then season it however you want. I used lemon to help with flavor and have the spices stick to the fish without burning, but you could use olive oil too. I'm doing Shift Shop right now and that wasn't part of the recipe, so lemon it was. Honestly, I didn't miss the olive oil one bit! (on this Salmon I added cubed pineapple, cilantro, salt, pepper, italian herbs).
Then popped it in the oven and wa-la! All done and NO MESS TO CLEAN UP!!! Double win in my book, although the night I cook my hubby does dishes. He should be thanking me for this new method :)
Finished product...sweet potatoes, Hawaiian pineapple salmon and noodles. Delicious! If you're on 21 day fix this would pair well with a glass of wine, but on Shift Shop, it pairs great with water. haha
One thought - I bet you could try this cooking method with the sweet potatoes too. I sprayed them with olive oil and topped with Italian herbs and they were delicious. I cooked 3 large sweet potatoes so we have them for all week. I'll just measure and heat. I love easy food if you haven't noticed. You DO NOT HAVE TO BE A CHEF!! Beachbody takes out all the guesswork and makes us all look amazing in the kitchen!
