Sweet n’ Sour “Candies

Why buy these when they are so easy to make??!


INGREDIENTS

2 medium limes, juiced

2 tsp. honey

1 cup green grapes, halved

1 cup fresh blackberries

1 cup fresh raspberries

INSTRUCTIONS

1. Add lime juice and honey to a medium mixing bowl; whisk to combine. Add grapes, blackberries, and raspberries; toss to combine. Strain; reserve liquid and refrigerate in an airtight container.

2. Freeze fruit for 4 hours. Return liquid to fruit; toss to combine. Freeze leftovers in an airtight container for up to 6 months.

Serves: 3

Cinnamon Coffee Cake

I think about “daily deposits” during my day and thought I’d share this with you in case it helps you think of how to improve each day by 1% more.

When you make a decision that you don’t have time for breakfast, your commute is more important than your nutrition, that other mornings are more valued than your own, in your workouts are in the way … you put mini deposits in the bucket of your mindset saying YOU AREN’T ENOUGH, OR UNWORTHY. That you don’t deserve enough.

But the truth is, YOU DESERVE IT ALL, AND MORE.

This cinnamon coffee cake recipe is the perfect sweet treat to kickstart your day. Add this one to your meal plan!

Cinnamon Coffee Cake

Serves 6

Ingredients

Nonstick cooking spray

1½ cups all-purpose gluten-free flour

½ cup coconut flour

2 Tbsp. brown sugar (or coconut sugar)

1½ tsp. baking soda

2 tsp. ground cinnamon, divided use

¼ tsp. sea salt (or Himalayan salt)

3 cups reduced-fat cottage cheese

8 large egg whites (1 cup - I buy liquid egg whites to save $)

2 tsp. pure vanilla extract

1 tsp. liquid stevia, opt

1 Tbsp. unsweetened cocoa powder

FOR TOPPING:

¼ cup dry rolled oats

3 Tbsp. chopped unsalted pecans

2 Tbsp. brown sugar (or coconut sugar)

2 Tbsp. unsalted organic butter (or coconut oil), melted

1 tsp. ground cinnamon

Instructions

1. Preheat the oven to 350° F.

2. To make coffee cake, lightly coat an 8 x 8-inch baking dish with spray; set aside.

3. Add gluten-free flour, coconut flour, brown sugar, baking soda, 1 tsp. cinnamon, and salt to a medium mixing bowl; stir to combine.

4. Add cottage cheese, egg whites, extract, and stevia (opt) to a blender; cover. Blend until smooth.

5. Pour cheese mixture into flour mixture; mix until a thick batter forms.

6. Pour half of the mixture into the prepared baking dish; use a spatula to spread evenly into corners. Add cocoa powder and remaining 1 tsp. cinnamon to a sifter (or wire mesh strainer) held over the baking dish; sift to evenly coat. Spoon remaining batter over top, using a spatula to spread evenly into corners.

7. To make topping: add oats, pecans, brown sugar, butter, and cinnamon to a small mixing bowl; stir to combine. Sprinkle evenly over batter.

8. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes. Slice into 6 equal pieces.

9. Refrigerate leftover coffee cake in an airtight container for up to 4 days. Heat gently before serving, if desired.

Macros: 1 Yellow, 1 Red, 1 Blue, 1 tsp.

Blueberry Crisp

Ingredients

1 cup old fashioned Oats (gluten free if necessary)

1/4 cup pecans chopped

1 tsp cinnamon

¼ tsp ground ginger

1/4 tsp nutmeg

2 tbsp coconut oil

1 tbsp maple syrup

1 lb frozen blueberries aprox 3.5 cups

2 scoops Vanilla LifeShake

Ingredients:

Preheat oven to 350 and prepare a greased 8x8 baking dish.

In a bowl whisk together oats, pecans, spices, lifeshake, coconut oil and maple syrup until combined.

Pour frozen berries into bottom of the pan. Layer crumble topping evenly on top of berries.

Bake 350 for 30 minutes until berries are soft and crisp topping is golden brown.

What would you serve this with? Nothing? Whipped Cream? Vanilla Ic Cream?

Peanut Butter Protein Balls 🥜

These are so good, makes me want to lick the screen! but please don’t do that :) They taste just like peanut butter cookie dough! Notice anything that’s missing??? I didn’t use chocolate chips!!! I know… yes, I am well aware of I just wanted to try it and SCORE!

PEANUT BUTTER PROTEIN BALLS RECIPE

INGREDIENTS

• 8 medjool dates, pitted

• 1 C unsalted roasted peanuts

• 1/4 C creamy peanut butter, no added sugar or oils

• 2 scoops protein powder of choice, I use life shake

• 2 Tbsp raw honey

• pinch of sea salt

• 1 Tbsp oat flour, opt (in case dough isn't solid enough to form balls)

INSTRUCTIONS

1. Place dates and nuts in a high-speed food processor on high for about a minute.

2. scoop sides down with a rubber spatula.

3. Add rest of the ingredients to processor. Mix for 1-2 minutes or until dough is formed. If dough is not solid enough to form balls, add 1 Tbsp oat flour to food processor until it's just right.

4. drop Tbsp of dough and roll between palms. Repeat with the remaining dough.

5. Keep in air-tight container and refrigerate for up to 1 week or freeze for 2 weeks.

Maple Cinnamon White Chocolate Chip Donuts!

Omgggg, don’t walk, run! Or click, in this case. You want these. You NEED these. You will not regret these! How often can you say that about donuts?? And they’ll satiate your sweet tooth and indulgence desires. We enjoyed them on a Sunday before church and I was worried the kids would struggle through an hour of church and being well behaved. Anyone else get me? My belly was very happy and there was ZERO sugar spike so everyone sat still and stayed focused on the message. Yes!!! We will be having these again!

5-ingredient Chocolate Peanut Butter Cups

This is ALL you need guys, couldn’t be simpler, yet still indulgent. I am giddy with excitement for my boys to come home and try these because I knowwwwww, they will loveeeee them! But then I have this other feeling of “where can I hide these bad boyzzzz?” Do you get me? It makes 12 so that’s 12 days of hiding ;o) I’ll cut to the chase…

Ingredients:
⅓ cup clean smooth peanut butter (I prefer dark roasted, but any nut butter will do)
1 ½ tsp honey (I always prefer creamed honey, but it made it thicker, so I wouldn’t for your 1st attempt. Yeah, I already know you’ll make this more than once!)
1 TBSP vanilla (you can do as little as 1 tsp, but I like vanilla flavoring)
1 TBSP unflavored, or vanilla flavored, Collagen Peptides (I prefer this brand for joint support as well, it is nothing except Bovine Peptides. **watch for unnecessary additives)
1 cup dark chocolate chips (or 70% Cocoa baking chocolate ~ 255 grams)

Directions:
1) Mix all ingredients together in bowl, except for the chocolate. Once creamy, put aside in fridge.
2) Put paper liners in a 12-slotted muffin tin. Set aside.
3) Melt chocolate in a microwave-safe container (at 70-80% power) in 30 second intervals. Stir in between so you don’t overheat it or burn the chocolate. You can also do this on the stove.
4) Dollop 1 tsp melted chocolate in each muffin liner and spread from edge to edge with back of spoon or spatula.
5) Follow with 1 tsp peanut butter mixture from fridge in each muffin liner. If you have leftovers, just even it out amongst the 12. Smooth layer.
6) Use remaining chocolate for top layer, 1 tsp in each, and smooth layer. Should be looking like a Reese’s Cup at this point ;o)
7) Put in the fridge for 2 hours and then remove and store in ziplock or Tupperware for up to 2 weeks. Or, share it and watch how fast it disappears.

I never brag so keep reading … these were the words from my 9 yr old’s mouth as he bit into these muffins all nice and warm! And because of the banana, they’re perfectly sweet with just 2 TBSP of honey! Seriously, no added sugar otherwise.

Here’s my recipe ——>
-1/2 c quick oat (I prefer Quick Oats vs Old Fashioned Oats because they don’t get as dry)
-1/2 c almond flour
-2 TBSP honey (try to always buy local - it helps with allergies)
-1/3 c CLEAN peanut / almond butter (really any nut butter will do, but know that some nut butters are more overpowering than others so consider that, esp when serving these to kids) - do not buy nut butters with added sugar or oil… why do that to yourself? Remember, we have goals we are working towards!
-1 egg
-2 large bananas, RIPE
-1 tsp vanilla
-1 tsp cinnamon
-1/2 tsp baking soda
-3 tsp cocoa
-1 c spinach (ok, hear me out on this…you’re going to have the cocoa above to mask any coloration so they won’t “see” it and you rarely ever taste spinach which is why it’s AH-MAZING to add to everything. Your kids are never the wiser and you’re just killing it softly in your kitchen! #MotherhoodIsNotForSissies
**I chose to add 6 dark chocolate chips to each muffin before they went in the oven bc…why not??!?

Yields 12 and takes 5 min to do all of this! Put all the ingredients in your blender in whatever order. Don’t you love how precise I am?!?!? haha If it' ain’t easy, AND DELICIOUS, I’m not making it. Enough said.

Put in pre-heated oven for 10 min at 375F or 10 min 175C. Next tip is crucial to your sanity. When they come out, set some aside for yourself. Or if you’re like me and omitted this step, I made 12 and when I turned around, i had 5 left so I divided them in half…literally and got 2 brekky’s out of them.

I’d love to see you serve 2.5 muffins with 2 eggs, or 8 egg whites, or 1 egg and 3 slices of lean turkey / ham rolled up, or 3/4 plain greek yogurt. That’s a pretty balanced brekky and you’ll be full till morning tea.

French Twist brekky, Brisbane - 1st visit

Oh wow, this place is decadent, creative, diverse and tucked away in Bulimba. If you're on the main drag, you'd never find it and we've been here over a year and just now discovered it!  The menu looked so good I was trying to convince my family what to order so I could try it all, but they chose different things.  Sigh. My choice was on the right... sourdough bread (which I passed on to my 5 yr old), roasted sweet potatoes and cauliflower (but came fried?), chickpea hummus, fermented cabbage, rocket salad, amazing guacamole and I ordered a poached egg on the side.  I did not go hungry and it was all gone!  I can say, everyone in our family was pleased! But check out Ty's order at the bottom. What in the world?!?! This place has gone crackers!

Loved the decor here! So unique and warm and friendly.  They also offer free art classes on Sat starting at 8:30am. I need to go back and try this so I can have an excuse for another breakfast.

Seriously y'all!??!?!  I ordered the plate on the left.  The pretty brioche french toast with strawberries, bananas, blueberries, warm maple syrup and a dollop (ok way ore than that) of vanilla ice cream on top. THIS seemed indulgent to me and I was giving my 9 yr old a splurge since he's so sensitive to sugar.  For whatever reason, my 5 yr old isn't affected as much.  

BUT, what they gave us, is on the right.  You might be asking, "what the hell is that?" And if you did, you asked the same thing I did. I paid $18 on that thing??? It is 2 layers french toast (it's so buried you can't even see it), fruit pictures, whipped cream, ice cream, caramel corn, fairy floss (picture cotton candy), 4 chocolate straws, and maple syrup.  I think I gaged when she put the plate down and I was so taken back, I was speechless.  My 9 yr old was speechless too, but for other reasons.  His eyes were huge and he dug right in. He kept offering us all a taste and we all said "no thanks mate!" haha  Smart move on his part.  Matthew kept yelling "gross dude, there's green hair on your food." I'll leave it at that!
